You have your broth, what to do now?

Of course you can simply heat up (below boiling) the broth and sip in a mug or bowl, it is absolutely delicious and we do recommend this for those in a rush! Otherwise if you want a full meal, we have put together some easy to follow and simple outlines that are specific to certain areas of Vietnam so you can choose and decipher which kind of local you are!

Northern Vietnam (Hanoi – Phở Bắc)

wide noodles, green onions, cilantro, sliced onions (grilled or fresh), Native classic beef broth

(optional) Add Flank, Brisket or rare Beef steak cuts

Central Vietnam (Hue - Phở Bò Huế)

thick noodles (like Udon), grilled ginger, shallots, and onion, shrimp paste, Native classic beef broth

(optional) beef shank or pork hocks, chilli

Southern Vietnam (Saigon - Hủ Tiếu Bò Kho)

egg or rice noodles, tomato paste, carrots (lightly boiled), cooked white radish, lemon grass, Native classic beef broth

(optional) braised beef chunks, coconut water

flat rice noodles, good quality (dry) red wine, charred ginger and shallots, Thai basil, cilantro, Native classic beef broth
